Description of the invention.
The invention relates to a process for sterilizing packaged foods in which a reduction valve according to the prior art for pasteurization is used. In order to achieve sterilization temperatures (124 degrees) faster than with conventional steam sterilization, microwaves are used in a pressure vessel, whereby the heating takes place according to a procedure which differs from conventional sterilization processes with steam and microwaves, both for heating and cooling. autoclaving normally, with closed packages, but the microwaves are allowed to heat the food in the packages so that an internal pressure is created in the package, whereby the valve opens and releases annuals in the autoclave. This steam creates a pressure in the autoclave so that sterilization temperature can be reached.
In this process, the food is boiled in the package, whereby a preparation and a faster heat equalization takes place than when the food is not allowed to boil as in normal sterilization.
The heating process is regulated by the supplied microwave energy being controlled by the pressure in the autoclave, which in turn is generated by the steam from the product in the package.
The procedure according to the entry differs from both autoclaving with annuals and with microwave waves, where in both cases the autoclave is pressurized from the outside to raise the boiling point, so that sterilization temperature can be achieved inside the package without the contents boiling. Boiling would mean that the packages without a reduction valve break.
An additional advantage of having a valve on the package that opens, is that you can ventilate unwanted gases from the food, such as lu fi, and oxygen dissolved in the product water. This possibility simplifies the pre-process with the raw materials, so that in many cases completely fresh raw materials can be used. Getting the oxygen out of the package completely is a great advantage as the oxidation process inside a whole can can mean that, even if you do not have a bacterial effect, certain products are destroyed by they (oxidize) hairs gradually, with only a little oxygen present, and become insoluble as human food During normal autoclaving with steam, the new oxygen-barrier (EVOH) plastic foils cannot be used to make oxygen-tight packaging or because the EVOH layers are destroyed by the prolonged heat treatment, with only thematic heat conduction in the packages. During heat treatment according to the invention, the food in the package is quickly brought to boiling with microwave energy, whereby the steam is released through the valve, at the same time as there is a mixing in the package during cooking, which also accelerates the heat conduction in the food, further shortening the process time. The short process time (about four times faster than in autoclaving with steam) means that the new barrier plastics can be used and you do not need to put aluminum layers in the package to get oxygen barriers, which is the case now with soft packages that are steam sterilized.
When the sterilization process is completed in the autoclave, it is not necessary to cool the products, before opening the autoclave, in the process according to the invention.
The valve regulates the pressure in the packages so that they do not burst when the packages boil during the pressure reduction when the packages are taken out of the autoclave and the valve 534 389 3 also closes automatically at a slight overpressure when the package has cooled down or the heating has stopped. separate cooling system.
